Icream is more tasty when it is cold because ice cream consists almost of frozen milk. During defrost (ice cream gets additional heat, ie. energy) ice milk melts, ice cream is changing the structure ⇒ changing the taste. Barbecue additional heating means denatured protein (meat – it is a protein), which makes it more tasty. But for ice cream heating makes it less tasty.
