Explain why deflection of wind increases as one travels from the equator to the North pole or South pole?

It happens because of the Coriolis force. At the poles, the speed of earth's rotation is smaller and the wind deflection is high because winds moving at a certain speed cover greater distance. At the equator, the speed of rotation is much greater and the deflection is less significant because winds cover smaller distance.
