I have completed a lowry assay and would like to know why my experimentally derived protein concentration values for gelatine and globulin are different from the standard protein concentrations that were given.

Standard protein concentrations are the solutions with known protein concentration. They are used to derive a relationship between protein concentration and signal of the apparatus.

Protein concentration in a sample is compared with that known relationship to estimate the actual one. Therefore, tested protein concentration value for gelatin and globulin must be different from the one in the standard solution as this is the searched value.
