I was wondering what is the difference between gelatin extracted from animals, fish or vegetables and if they carry any DNA traces to their origin.

Gelatin extracted from animals, fish is a mixture of peptides and proteins. "Vegetable gelatins" although there is no chemical relationship; they are carbohydrates, not proteins.
