Why do chocolates that we buy from the store melt when we leave them in room temperature, whereas chocolate fondue hardens when left in room temperature?

Because chocolates and chocolate fondue are consisted from different mixtures of chocolate and other components, so mixtures of different composition, appear different properties, one of which is the melting temperature.
