The phenomenon is caused by the root pressure. Root pressure is the pressure in the vessels of plant roots associated with the osmotic processes of one-sided diffusion through a semipermeable membrane of the root cell. The accumulation of mineral and organic substances in the root vessels (xylem) leads to the movement of water into the roots from the soil solution. The root pressure pushes the water and dissolved nutrients up the stem.
