The bile salts are produced in the liver and are released into the duodenum. The bile salts emulsify fats and lipids enabling their digestion and absorption. As bile salts consist of hydrophobic and hydrophilic components, that localize in the interphase between fats and water providing the formation of micelles that can be further processed by lipases - enzymes that break down fats enabling their absorption.
