A pectin under the influence of enzymes, will be hydrolyzed or will be dissolved tothe monomer unit of pectin, namely the galacturonic acid residues, which is aproduct of the oxidation of glucose.
In the enzymatic hydrolysis of pectin output of the final compounds depends on the nature ofthe relevant enzymes.
